So if you don't like the messy dining environment of the night market, Yang's noodle shop is the right place for you. The shop itself began as a simple and ordinary food stand in the night market, but with its authentic style of cooking and innovations, it quickly gained its reputation and developed into today's scale. Its specials are oyster noodles and Taiwanese-style tempura. Instead of using lots of soy source to season the noodles, Yang's puts in plenty of vinegar, which can better bring out the freshness of oysters. The sauce for the tempura is another innovation. Besides the usual ingredients of sesame and peanut sauce, Yang’s adds some plum juice to stimulate the customers' appetite.
